Yield: 10 to 11 pancakes (10 cm or 4" in diameter). Ingredients: 250 mL (1 cup) milk, 1 large egg, 300 mL (1 1/4 cups) of pancake mix, using a levelled dry measure. Method: Preheat skillet over medium high heat or electric griddle to 190C (375F). Skillet is ready when drops of water sizzle, then disappear almost immediately. Lightly grease skillet or griddle. Pour mix into mixing bowl. Add egg and milk (for extra tender pancakes add 1 to 2 tablespoons of vegetable oil). Stir with wire whisk until large lumps disappear. Let stand 1 to 2 minutes to thicken. Pour slightly less than 50 mL (1/4 cup) batter for each pancake onto skillet. Turn when pancakes bubble and bottoms are golden brown. Continue to cook for approximately 1 minute or until second side is golden brown. WAFFLES: Heat waffle iron according to manufacturer's instructions. Combine 425 mL (1 3/4 cups) Aunt Jemima Original Pancake Mix, 300 mL (1 1/4 cups) milk, two large eggs and 50 mL (3 tbsp) vegetable oil. Stir until large lumps disappear. Pour batter onto lightly greased waffle iron until about 2/3 of the surface is covered. Close lid and wait approximately 3 to 4 minutes or until steaming stops. Makes eight 10 cm (4") waffles.
